Probably nothing that you're going to find convenient with a screen reader.  That sort of tool is really only useful if you can navigate around quickly.

yes. it can intercept http packets, but it can also create requests. I recommend you to use shift+enter to open response packets, this way you can easily close them and go back to make other requests

Fiddler is nice.

I recently stumbled upon HTTP Toolkit and was very impressed. If you want to intersept, analyze or replay HTTP(S) this is definitely the app to do it. All components are opensource on Github.

You can attach to browsers, Android devices, processes and terminal windows just off the top of my head. Their accessibility is almost perfect, and it's under active development with upcoming features such as support for global traffic, iOS devices and virtualbox VMs just to name a few.
